1 cup raw cashews
1/4 cup dried coconut
2 tbs ground flax seed
5 tbs raw cacao powder
1 tsp vanilla bean powder
1/8 tsp himalayan salt
2 tbs raw coconut nectar
2 tbs raw coconut butter
1 cup medjool dates, pitted (approx. 10)
Step 1 - In a food processor, combine raw cashews, dried coconut, and himalayan salt. Process until you reach a rough flour like consistency. (or small crumbs)
Step 2 - Add remaining ingredients and process again until you reach a dough like consistency. You will know they're done when you can press mixture together with fingers and it sticks together. The mixture may even form into a large ball in your food processor.
Step 3 -Roll into small bite size shapes. (approx the size of a golf ball)
Step 4 - Enjoy just like this or roll in hemp seeds, chia seeds, cacao powder, or dried coconut. Place into the refrigerator for at least two hours to firm up prior to enjoying.
Store in refrigerator or freezer. Makes approximately 18 energy bites.
