Southwest Black Bean Burgers (Air-Fryer Recipe)

Servings: 6 burger patties
Ingredients:
1-15 oz can black beans, rinsed and drained
1/2 cup cooked quinoa, packed*
1/2 cup frozen corn, thawed (or canned)
1/2 cup red bell pepper, chopped
1/2 cup onion, chopped (red or yellow)
2 tbs extra-virgin olive oil
1/2 cup fresh cilantro, packed
2 tsp garlic powder
2 tsp cumin
1/2 tsp crushed red pepper
1 tbs coconut sugar, optional for flavor balance
1 1/2-2 tsp himalayan salt
1/2 cup raw sunflower seeds
1/4 cup brown rice flour (or other gluten-free flour)
Directions:
Step 1 - Combine all ingredients except for brown rice flour and corn into a food processor. Pulse until pureéd, while still leaving some texture and chunkiness.
Step 2 - Remove mixture from food processor and place into a large bowl. Stir in brown rice flour and corn until mixture is well-combined. Place until the refrigerator for 15 minutes to thicken and set.
Step 3 - Using a measuring cup, take 1/3 cup of burger mixture and form into patties.
Step 4 - Set your air-fryer to 400 degrees and cook for 8-10 minutes, depending on how cooked you would like your burgers. Burgers will come out softer at first. Allow to cool for at least 5 minutes prior to serving
Step 5 - Serve on top of a salad, on a burger bun with mashed avocado, salsa, and red onion, or sandwich style with all of your favorite vegetables as imaged.
