Sweet Potato Rigatoni (With Hidden Vegetables)

Servings: 4-6
Ingredients:
2 cups soy milk, unsweetened
1/3 cup fresh lemon juice
3 tbs hemp seeds
1/2 cup raw cashews
1/4 cup nutritional yeast
1 scoop Purely Inspired organic, unflavored greens powder
1 tsp garlic powder
1 tsp onion powder
1 tsp himalayan salt
1/4-1/2 tsp black pepper
2 cups sweet potato, peeled and cubed (you could also use butternut squash or pumpkin)
1 pound of rigatoni, or pasta of your choice
Directions:
First, add your sweet potato to a pot and add just enough water to cover. Boil for 5-7 minutes, or until fork tender. Strain into a colander and then combine into a blender with remaining ingredients. Blend for one minute, or until smooth. Cook your pasta according to package instructions and stir in your sauce. This sauce will yield approximately five cups. Reserve 1/2-1 cup of pasta water just in case you need to use it to thin out your sauce.
