Roasted Cashew Hemp Granola (Air-Fryer Recipe)

Ingredients:
1 1/2 cups rolled oats
1/2 cup raw cashews
1/2 cup raw pumpkin seeds
1/4 cup dried coconut, shredded
1/4 cup hemp seeds
1/4 cup coconut oil, melted
1/4 cup maple syrup
2 tbs cacao nibs*
1 tbs cinnamon
1/4 tsp himalayan salt
Directions:
Step 1 - Combine all ingredients except for coconut oil and maple syrup in a large mixing bowl. Stir until well-combined.
Step 2 - Stir in coconut oil and maple syrup until all of the granola is coated.
Step 3 - Line the bottom of the air-fryer with parchment paper and then pour granola over top. Make sure it is spread evenly across the bottom of the air-fryer.
Step 4 - Set your air-fryer to 325 degrees and set it for 15 minutes. Stop and stir every 5 minutes to ensure even cooking.
Step 5 - Allow to cool completely and then store in a glass jar in the refrigerator for up to two weeks. This granola will come directly out of the air-fryer looking somewhat wet from the oil as if it's not done. Allowing to cool completely will yield a dry and crunchy texture.
