4-Ingredient Vegan Salad Dressing

We love a good salad + dressing recipe! I know to some people salads are boring or considered a side item, but I try to change that as much as possible...not only by making them fun and colorful but also adding some cooked elements to the salad.
A typical side salad you would see in a restaurant might be a chunk of lettuce with a couple of slices of tomatoes and chunks of onion. If you're lucky, there might be a couple extra vegetables in there. But that's not how I do things.
The main green I use is romaine lettuce. You can also use spring mix, arugula, kale, or a mix of fresh greens.
Then I topped it with:
-Grape tomatoes
-Purple onion
-Mini bell peppers
-Avocado (not a salad without it)

-Roasted cauliflower and sweet potato tossed in a tiny bit of garlic-infused olive oil + Himalayan salt
Then, I made a 4-ingredient dressing to go with it that you can make anytime, anywhere. No special equipment or fancy ingredients needed.
Recipe:
1 tbs raw tahini (you can use up to two tbs - I like the brand Artisana Organics)
1 tbs Dijon mustard
1 tbs raw apple cider vinegar
2 tbs maple syrup
1/4 tsp himalayan salt
1/2 tsp onion + garlic powder, optional
1/8 tsp black pepper, optional
Directions:
Step 1 - combine all ingredients into a small bowl or glass mason jar. Mix together with a spoon or shake all ingredients together into a jar.
Makes enough salad dressing for one large salad!
