Quinoa Burrito Bowls


1 cup quinoa

2 cups vegetable broth

1/2 cup black beans

1/2 cup fat-free refried beans

2-4 tbs cashew sour cream*

2-4 tbs fresh guacamole*




Step 1 - Add vegetable broth and quinoa to a pot and cook according to package instructions. This typically requires bringing to a boil, reducing heat to low, covering, and letting simmer for approximately 15 minutes.

Step 2 - Place quinoa into a bowl and top with black beans, refried beans, cashew sour cream, fresh guacamole, salsa, and garnish with cilantro.

*Blend 3/4 cup water, 1/4 cup lemon juice, 1 tsp salt, and 1 cup raw cashews until smooth & creamy.

*Mash avocado, then add Himalayan salt and garlic powder to taste. Stir in red onion, chopped tomato, lime juice, and cilantro.
