Spicy Raw Pad Thai



1/2 cup fresh orange juice

1 1/2 tbs fresh lime juice (approx one small lime)

1 tbs maple syrup

1 tbs coconut aminos

1/8 tsp cayenne pepper

1 clove garlic

1/2-1 tbs fresh ginger, chopped

2 tamarind pods (peeled and soaked in boiling water for 30 minutes)

2 tbs peanut or almond butter

3 tbs raw, un-hulled sesame seeds


1 package of kelp noodles, rinsed and drained

1/2 cup carrot, shredded

1/2 cup purple cabbage, shredded

1/2 red bell pepper, sliced thin

1/2 cup green onion, chopped


Raw cashews or peanuts, sesame seeds, cilantro


Step 1 - Make your sauce by combining all ingredients into a blender and blending on high for approximately one minute, or until smooth and creamy.

Step 2 - In a large mixing bowl, begin combining and mixing together all of the ingredients for the salad portion of the Pad Thai.

Step 3 - Add sauce to your mixing bowl and stir together until well-combined.

Step 4 - Transfer to a serving bowl, garnish with toppings, and enjoy immediately.

-Don't want a raw recipe? Use regular Pad Thai Rice Noodles instead of kelp noodles.

-Don't have kelp noodles? Substitute zucchini noodles instead.
