1 cup water
2 tbs apple cider vinegar
1/2 cup raw cashews
1/2 tbs onion powder
1/2 tbs garlic powder
1/4 cup nutritional yeast
1 tsp himalayan salt
2 cups sweet potato, chopped
1/2 tbs coconut oil
Black pepper, optional
12 to 16 ounces gluten-free macaroni
Step 1 - Boil sweet potatoes until tender. (approximately 5-10 minutes, depending on size)
Step 2 - Combine potatoes with the rest of your ingredients and blend until smooth & creamy.
Step 3 - Cook pasta according to package instructions.
Step 4 - Combine sauce with noodles, garnish with fresh minced basil, and enjoy!
For the noodles, I love using gluten-free macaroni noodles from the brand Ancient Harvest. The texture of these noodles works amazing with this recipe, but feel free to use whichever noodles you prefer.
