Raw Brownie Cheesecake Cupcakes


Recipe:

Brownie Crust-

1 1/2 cups raw brazil nuts (or almonds/walnuts/pecans)

1/2 tsp vanilla bean powder

1/8 tsp himalayan salt

1/2 cup raw cacao powder

1 1/2 cups pitted dates

Cheesecake Icing-

1/2 cup water

1 lemon, juice

1/8 tsp himalayan salt

1/3 cup maple syrup

2 tbs virgin coconut oil, melted

2 cups raw cashews

Directions:

Step 1 - First, make your brownie crust. Add all ingredients except for dates into a food processor. Process until evenly broken down.

Step 2 - Once mixture is broken down and combined, add dates and process until the mixture begins to bind together or forms into a bowl on its own while processing.

Step 3 - Grab a muffin pan (or any pan of your choice) and form your brownie crust into each of the muffin tins.

Step 4 - Now, lets make the cheesecake icing. Combine all of your ingredients into a high-speed blender and blend for one minute, then pour and spread on top of your brownie.

Step 5 - Place into the freezer to firm up for at least two hours before serving.

Makes 12 Cupcakes
