Peanut Butter Chocolate Chip Cookie Dough Bites


3/4 cup raw cashews

1/2 cup rolled oats

1/8 tsp himalayan salt

1 1/2 cups pitted dates

1 tbs coconut oil

2-3 tbs peanut butter

1 tsp vanilla extract

1/3 cup vegan chocolate chips


Step 1 - In a food processor, combine cashews, oats, and salt, then process until finely broken down.

Step 2 - Add dates, melted coconut oil, peanut butter, and vanilla extract and process until the "dough" becomes sticky and binds together.

Step 3 - Mix in chocolate chips by hand.

Step 4 - Form into balls and store in your refrigerator.

Makes 18-24 depending on the size you choose.
